Butterfly pea and the colour change: brewing Ilan Presence

The first time you brew Ilan Presence, the water turns a deep turquoise, and it surprises almost everyone. That colour is the work of butterfly pea flower, and it is one of the small joys of this blend.

The flowers behind the colour

Butterfly pea flower is a striking blue bloom whose natural pigments turn hot water blue to turquoise.

Add a squeeze of lemon and the colour shifts toward purple and pink, because the pigment responds to acidity.

It is a bit of harmless magic in the cup, and children love watching it.

The native mints

Presence brings together spearmint, peppermint and native mints, including river mint and round leaf mint, for a fresh, cooling cup.

It is caffeine-free, so it suits the afternoon and the evening as much as the morning.

Three ways to brew it

Steep one tea bag for three to five minutes and enjoy the colour as it develops.

Brew double strength, cool and pour over plenty of ice for a cooling drink in the warm months.
